My lunch today:
SALAD:
spring mix, leafy romaine, red leaf lettuce, etc. (get some color in there!)
avocado chunks
cucumber
strawberries
feta cheese
slivered almonds
MAPLE SYRUP DRESSING:
3/4 cup EVOO
3/4 cup red wine vinegar
6 tablespoons maple syrup
1/2 teaspoons sea salt
1/4 cup brown mustard
1/4 yellow or white onion
1/2 teaspoon garlic powder.
Blend in a high-powered blender until smooth.
