Egg Salad Sandwiches (a healthier way)

6 large eggs
1-2 tbsp. mayonnaise or greek yogurt
salt and pepper
a tiny squeeze of lemon juice
2 stalks celery
1/2 bunch chives, chopped
whole grain bread
Place the eggs in a mixing bowl. Add the mayonnaise, salt and pepper, lemon juice and chives. Mash with a fork.  Add celery and mix in gently.  Put on bread with lettuce. Toast your bread if you’d like. Enjoy!

  1. Looks delicious. I have a ton of hard boiled eggs to use up from Easter. I just may make these for lunch every day this week ;-)
