Corn Bread

2/3 cup honey
1/2 cup coconut oil (or butter)
2 eggs
1 cup kefir or buttermilk (you can use diary milk kefir or coconut milk kefir)
1/2 teaspoon baking soda

1 cup yellow cornmeal
1 cup whole grain flour (plain kamut is excellent in this recipe)
1/2 teaspoon salt

Combine honey and coconut oil in a mixing bowl. Add eggs, kefir and soda.
Mix cornmeal, flour and salt in a small bowl.
Add cornmeal mixture to wet mixture. Stir as little as possible (you don't want to activate the gluten and make your bread chewy instead of crumbly)
Butter (coconut oil works great) glass 8x8 pan or make into muffins.
Bake at 350 degrees for 20-30 minutes.
