Chocolate Chip Zucchini Muffins

*These are a new favorite!

Dry:
1 1/2 cups whole grain flour like Spelt, Kamut or Whteat
(Bob's red mill gluten free or all-purpose work too)
1/2 tsp baking soda
3/4 tsp salt
1/2 tsp cinnamon
1/3 cup + 2 tbsp sugar
1/2 cup chocolate chips

Wet:
1/2 cup applesauce
1/3 cup coconut oil
1 tsp apple cider vinegar (or white distilled vinegar)
1 1/2 tsp pure vanilla extract
1 cup grated zucchini

Preheat oven to 350
Place cupcake liners into pan
Combine dry ingredients (including chocolate chips)
Combine wet ingredients (including zucchini)
Mix wet into dry
Spoon into cupcake liners
Bake 20 minutes
Allow to cool before removing from tray

Per muffin: 150 calories, 8 grams fat, 17 grams carbs, 4.5 grams sugar, 3 grams protein,
