Teriyaki Vegetable Stir-Fry

2 Tbsp. olive oil
3 carrots, sliced
2 celery stalks, sliced
1/2 red pepper, sliced
1/2 yellow pepper, sliced
1/2 green pepper, sliced
1 yellow summer squash, sliced
1 c. peas
2 c. cauliflower, cut into small pieces
2 c. broccoli, cut into small pieces
1/4 c. red cabbage, shredded
4 Tbsp. soy vay island teriyaki marinade
1 package wel-pac chow mein stir-fry noodles

Heat oil in a large saute pan. Add veggies and saute for 5 minutes. Add marinade and stir often.

Bring 2 quarts water to a boil and cook noodles for 2 minutes. Strain, rinse, and add to veggies.

Cook for another 5 minutes, stirring often.

[Use any veggies or noodles you have on hand.]
