Vegan Banana Muffins in Bulk

Makes 48 muffins that can be shared or frozen.

  • Combine wet ingredients.
1 1/3 cups coconut oil
1 1/3 cups raw turbinado sugar
8 tbsp applesauce
4 1/2 cups banana
  • Combine dry ingredients.
7 cups whole grain flour (I used Kamut)
5 tsp. baking powder
2 tsp. baking soda
3 tsp. salt
  • Mix together just until blended. 
  • Grease muffin tins with a little coconut oil. 
  • Bake at 350 for 25 min. Cool on wire rack.
