Breakfast Burritos


1 Tbs. olive oil
1 potato, cubed
1 package firm tofu, rinsed and cubed
1 Tbsp. turmeric
1 green pepper, seeded and diced
1 red pepper, seeded and diced
1 small sweet onion, diced
salt and pepper to taste
whole-wheat tortillas, warmed
2 avocados, diced or mashed
fat free sour cream
salsa
Heat olive oil in a large frying pan. Add potatoes and stir. Cook for about 5 minutes. Add tofu and turmeric. Stir. Add peppers, onion, salt, and pepper. Cook for about 20 minutes, stirring often. Serve in tortillas with avocado, sour cream, and salsa.
