Crepes


1 cup flour (half whole wheat, half white whole wheat)
2 eggs (Get them from your neighbors chickens like I do!)
1 cup milk (almond milk or any kind works)
1/4 tsp. salt (Real Salt)
2 TBSP butter
2 TBSP sugar (half honey, half agave)
2 tsp. vanilla

Blend it all up in a blender. Then spread about 1/4 cup thinly on a griddle at about 250 degrees. Flip when the top is not wet anymore. Cook a little more.

Top with FRUIT (raspberries, bananas, blueberries, strawberries, peaches), honey, butter, applesauce, whipped cream, peanut butter, jam, coconut, Nutella, cream cheese, or anything else that sounds good or that you have on hand! (As you can see, with the toppings you can make them as light or heavy as you want.)
