Pomegranate Citrus Salad and Poppy Seed Dressing

Pomegranate Citrus Salad

4 C mixed greens
2 C orange slices, peeled (I used clementines)
1 C pomegranate seeds
1/2 C dried cranberries (I skipped these)
1/2 C pistachios (I used slivered almonds instead)
1/2 red onion, thinly sliced
optional: 1 avocado, sliced
Toss all of the ingredients together. Serve with poppy seed dressing (below) or whatever
dressing you want—get creative!
Variation: Add candied pecans instead of pistachios.

Poppy Seed Dressing

1/2 C extra virgin olive oil
1/2 C white wine vinegar
1/4 C honey
1/4 tsp. paprika
1 Tbsp. poppy seeds
Blend all ingredients except poppy seeds briefly in a high-power blender. Add the poppy
seeds and pulse a couple of times.
